Attention all pizza lovers, do you find yourself seeking the best pizza in the Garden State? Well with so many great local options it’s no wonder why New Jersey is considered to be the best when it comes to pizza with some spots earning their place in the pizza hall of fame.
Is the pizza hall of fame seriously a thing? It is and it’s awesome, but on it contains one of New Jersey’s biggest pizza secrets, that has a cult like following for all that love it. We’re talking about Trenton’s famous Tomato Pie. Now if you haven’t heard of this, we don’t blame you its history is a well-kept secret within the local community as well as the pizza industry, but how is a tomato pie different from the normal pizza we’re used to? Well simply put a NJ style tomato pie has makers put the cheese and their toppings before putting down the sauce, leading to a nice top layer of tomato sauce that locals would die for. For over 100 years this pizza has ruled with an iron fist over Mercer County.
It all started with Papa’s Tomato Pies and its young owner Giuseppe “Joe” Papa, the 17-year-old Italian immigrant moved to American and started making pizza when he was just 15 years old. By far they are the longest running family-owned pizza shops in the country with a long history under their belt. Alongside them are their rivals De Lorenzo’s Tomato Pies, which has been operating not as long as Papa’s but is still world renowned, being one of the inductees into the pizza hall of fame. Eventually both places moved to Robbinsville NJ and are still open to this day. Their respect followings have grown massive even drawing the attention of Dave Portnoy creator of Barstool Sports with his One Bite Reviews where he gave De Lorenzo’s the highest rating of any shop in NJ he’s visited thus far. But what is Papa’s and De Lorenzo’s secret? Well, De Lorenzo’s has a nice layer with a borderline crispy cook, even having abstract and uneven cuts which some fans say is part of the charm. Where Papa’s is a bit more even in slicing as well as having a lighter cook, though where Papa’s throws a haymaker is something, they call a mustard pie. You read that right, their mustard pie is a major part of their claim to fame as their dough is thinned out and cooked with a thin layer of spicy brown mustard.
