Tasty Recipe: Strawberry Salad with Yogurt Dressing

Turn your boring old salad into a creamy, sweet summertime treat.
Ingredients
Dressing:
- 2 tbsp. nonfat, plain yogurt
- 2 medium-sized strawberries
- 1 tsp. fresh lime juice
- 1/2 tsp. lime zest
- 1/2 tsp. honey
- 1/4 tsp. Dijon mustard
- 1/4 tsp. onion powder
- 1/8 tsp. sea salt
- 1/8 tsp. black pepper
Salad:
- 1 cup mixed greens and/or baby spinach
- 1/2 oz. red bell pepper, sliced
- 1/2 oz. cucumber, sliced
- 1 medium strawberry, sliced
- 2 baby carrots, shredded
- 1 tbsp. minced red onion
Directions
- Place all dressing ingredients in a blender. Blend until smooth or about 30 seconds.
- Toss all ingredients for salad together. Drizzle dressing on top.
Makes one serving. Serving contains about 80 calories, 0.4 g fat (0 g saturated fat, 0 g trans fat), 0.6 mg cholesterol, 390 mg sodium, 14.9 g carbohydrates, 9.7 g sugar, 2.5 g fiber, and 3 g protein.
