LeeFest Festival at John Darlings Farm in Edenbridge, England.

I have always had a deep and undying love for grilled cheese sandwiches. I’ve loved them ever since I was a child and would always ask my mom to make me one whenever I was feeling down or wanted a snack.

As I grew older, my love for grilled cheese only intensified. I tried all different kinds of cheeses, bread, and cooking methods to create the perfect grilled cheese sandwich. I even participated in a grilled cheese competition at a family get-together and won first prize with my secret ingredient, a dash of ketchup.

My love for grilled cheese became so strong that I wanted to start up my own grilled cheese food truck. The dream was to travel around the country, serving up delicious grilled cheese sandwiches. I had hoped to create a loyal following of grilled cheese fans who would come back often to try the grilled cheese sandwich of the day.

Then I would meet the love of my life at a grilled cheese festival. She would be a fellow grilled cheese enthusiast and we would bond over our shared love for the gooey, melted sandwich. We would get married in a ceremony that featured grilled cheese sandwiches, and specialty drinks that taste like grilled cheese.

While none of this ever came to fruition, my love for grilled cheese has never wavered, and I continue to make grilled cheese sandwiches for my family and friends from time to time.
One day my epitaph will read, “Loving son, husband, father, and grilled cheese enthusiast.”

Here are some of my favorite types of grilled cheese sandwiches…

  • Classic Grilled Cheese:

Made with white or wheat bread and American cheese.

  • Gourmet Grilled Cheese:

Made with artisan bread and high-quality cheese, such as Gouda, Brie, or Feta. Sometimes also includes additional ingredients like roasted vegetables, caramelized onions, or prosciutto.

  • Vegan Grilled Cheese:

Made with vegan bread and cheese substitutes such as vegan cheddar or plant-based cream cheese.

  • BBQ Grilled Cheese:

Made with barbecue sauce, grilled chicken or pulled pork, and cheddar cheese.

  • Italian Grilled Cheese:

Made with Italian bread, mozzarella cheese, and tomato sauce or pesto.

  • Breakfast Grilled Cheese:

Made with bread, cheese, and breakfast items such as bacon, eggs, and sausage.

  • Dessert Grilled Cheese:

Made with sweet bread, such as brioche or challah, and filled with ingredients like Nutella, strawberries, or cinnamon sugar.
