These breakfast-time treats have all the flavor of other muffins but get their sweetness from applesauce and honey.

  • 2 ripe bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1/4 cup honey
  • 2 tsp. vanilla extract
  • 2 cups whole wheat or Einkorn wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 tbsp. ground flaxseeds

Preheat oven to 425 degrees. Grease and flour 1.5 muffin tins or place cupcake liners into each tin. In a large mixing bowl, place bananas, applesauce, eggs, honey, and vanilla extract. Whisk (or use balloon whisk attachment for stand mixer) until well blended. In a separate bowl, sift together flour, baking powder, and baking soda. Stir flaxseeds into flour mixture. Gradually whisk flour mixture into wet mixture until well blended. Pour into tins. Bake for 20 to 25 minutes, until brown on top.
